Not long ago it was my mother’s birthday, and she told me that she wanted to surprise her guests with a new dish, preferably without mayonnaise and vinegar. And then I remembered how recently, while visiting my godfather, I really liked the champignon kebab. This recipe met all the criteria: tasty, without vinegar or mayonnaise, and most importantly, it looks very beautiful and appetizing on the table. Another plus is that this kebab is cooked in the oven on skewers, which means we don’t have to bother with the grill and serve it in portions, which is very convenient for a large company.

To prepare champignon skewers in the oven, we will need medium-sized champignons, cherry tomatoes and wooden skewers. First we prepare sour cream sauce for the shish kebab.
We will need sour cream with 20-25% fat content. There is no exact proportion as such; I measured everything “by eye.” For 300 g of mushrooms, about 1 cup of sour cream. Salt the sour cream to taste, add ground black pepper, paprika, barbecue seasoning (a little) and chopped dill (optional). Mix everything.
Now we take mushrooms and tomatoes one by one, generously grease them with sour cream sauce and string them onto skewers. You need to start and end with mushrooms.
During baking, the mushrooms will release juice; for convenience, take a high-sided baking dish or other suitable, heat-resistant dish and place our skewers with kebabs on it.

We will bake in an oven preheated to 200*C for about 15 - 20 minutes.
Transfer the champignon skewers to a plate and serve, garnished with herbs.

To prepare the marinade, you can also use ketchup or tomato paste, soy sauce, lemon juice or vinegar, or any seasonings suitable for mushrooms. But don’t overdo it, otherwise the taste of the champignons themselves will be lost among the variety of spices. Cooking time for mushroom kebab is 60 minutes.

Preparation:

Separate the mushroom caps from the stems, rinse them thoroughly and dry. If you want to use whole champignons, you can omit this separation procedure. But still the caps are more meaty and tasty. And you can always freeze the legs and use them to prepare mushroom soup, sauce or some other main courses.

Prepare a marinade from finely grated garlic, oil, and other spices and seasonings.

Place the champignon caps in a deep cup, pour in the marinade, mix gently (note that the mushrooms are very fragile) and leave to soak for at least a third of an hour.

After the designated time, you can begin to form the kebab. But first, turn on the oven and set the heat to about 200 °C - let it warm up. String the champignon caps, piercing them strictly in the center. And between them, pass small tomatoes cut in half.

Place the filled skewers across the oven, placing a parchment-lined baking sheet underneath (you can use foil).

We wash fresh champignons under running water and dry them. Next, pour the mushrooms into a container and fill with the previously prepared marinade. Mix the mushrooms with the marinade until they are completely saturated with it.

Before working on the mushrooms, place the wooden skewers in a suitable container and fill them with a small amount of water (it should only slightly cover them). Leave the skewers in this form for 15-20 minutes. Thanks to soaking during baking, the skewers will not begin to brown, so it is better not to skip this step.


Now let's prepare the champignons. We thoroughly clean each mushroom of dirt, do this with a damp sponge, or quickly rinse them under running water. We do not soak mushrooms under any circumstances, as they absorb moisture extremely easily, and we do not need excess water in mushrooms!


Let's prepare the marinade. It's incredibly easy to do. In a separate bowl, combine vegetable oil, soy sauce, lemon juice, paprika, hot pepper flakes, dried herbs, and pressed garlic. Mix and taste. If desired, add more freshly ground pepper and a little salt.


Pour the resulting marinade over the champignons.


Mix thoroughly, ensuring that each mushroom is completely covered with the marinade. Cover the bowl with a plate of suitable size or cover it with film and leave the mushrooms on the work table for 15-20 minutes (if you are short on time, you can skip this step and vice versa, if you have a lot of time, then you can leave the mushrooms for marinating for a couple of hours, but already in the refrigerator) so that they are saturated with all the aromas.


Thread the aromatic champignons onto wooden skewers. On average, a given amount of mushrooms produces 5-6 kebabs.


Place the resulting champignons on skewers on the sides of the baking dish, so that the mushrooms do not touch the bottom of the pan. If suddenly there is no form suitable in size, then you can bake champignon kebabs on a wire rack, but you must place a baking sheet under the wire rack so that during baking all the juices from the mushrooms flow onto it and not onto the bottom of the oven.


Bake the champignons in the oven on skewers at 200 C for 15 minutes. The mushrooms should be slightly fried, but remain quite elastic!

3. Meanwhile, prepare wooden skewers. Soak them in water for 15 minutes. This is necessary so that they do not burn during baking.


4. Then thread the mushrooms onto the skewers one by one. Place the kebabs on a baking sheet that is of a suitable size, namely, the champignons should not touch the bottom of the baking sheet so that they can be evenly cooked on all sides by hot air.

Heat the oven to 200 degrees and bake the mushrooms for 40 minutes, turning them periodically, like a meat kebab on the grill. Mushrooms should be served immediately after cooking.
